Kalamata olives are often known as the Greek olive and it is distinctive in taste and appearance from other black olives. Kalamata olives are deep, rich aubergine in colour. The flesh to pip ratio is also much higher than most cultivars. Hillcrest Kalamata olives are handpicked and then matured through a slow fermentation process for 9-12 months and then bottled on the Estate. Hillcrest Kalamata olives are a must for your Greek Salad.
